Despite doctor's warnings, the American love affair with beef continues. It's a major streak of red through our history; you can't have cowboys without cows, for example.

Historian Joshua Specht traces how cattle became king of meat sources, and how beef producers helped Americans develop a taste for steak, in the book Red Meat Republic: A Hoof-to-Table History of How Beef Changed America.

The author joined us in 2019 to lay out the story.
