Celebrating Food With A Pre-Spring Savor

We haven't yet figured out how to convey smell and taste through the radio, but we do have fun talking about food.

Every month our food segment, Savor, brings in food stylist and producer Will Smith. And Will brings in an additional guest with some level of expertise in either growing or preparing food, and often both. The recipe of the month features something that is in-season.

This month, we welcome Nick Stevenson from Dunbar Farms in Medford, part of the Rogue Valley Food Trail, an adventure in ecotourism (or is it "eating tourism?"). Will's recipe is Shaker Herbed Chicken. Join us for a chat that may tickle your taste buds, despite the audio-only delivery.

Shaker Herbed Chicken

1 fryer or roaster cut into 8 pieces

8 oz butter, softened

¾ cup of shaker herbs

Salt and Pepper

Minced garlic optional

  • Preheat oven to 425F, place chicken on roasting pan, slather with butter. Add spice mixture. Add minced garlic. Season with salt and pepper.
  • Bake 45 minutes.

Such an easy recipe made delicious with this shaker recipe for poultry.

I usually have dried herbs from last year but you can use store bought to this easy spice mixture.

Shaker herbs for poultry

Combine equal parts of:

Parsley
Sage
Marjoram
Thyme
Rosemary

Keep in jar, ziploc bag, or shaker, this group of aromatics is perfect for poultry ! Enjoy
