Savor: Bring In The Fruit!

Summer flavors are in full swing, and some of the foods growing around us are beginning to ripen.  We celebrate fruit in this month's edition of Savor, our food segment. 

Will Smith returns with tales of the care and preparation of stone fruits, including a recipe for grilled peaches with vanilla cream (below). 

And we get some tips on fruit preservation from the Southern Oregon Research and Extension Center.  Caryn Wheeler visits to talk about preserving summer fruits, and how to get further training in food preservation. 

Will's recipe for July:

Grilled Peaches with Vanilla Cream

1 cup mascarpone cheese
2 tsp vanilla paste
4 large peaches, halved and pitted
2 Tbsp butter, melted
Lemon zest to taste
Amaretti cookies (crushed)

Place mascarpone and vanilla paste in bowl and blend until smooth, then chill.

Place a griddle pan over high heat.  Brush peach halves with melted butter and place cut-side down on griddle and grill 3-4 minutes, until peaches are golden brown and grill marks develop.

Transfer peaches to platter.  Serve with a spoonful of cream and sprinkle with zest.  
Optional: sprinkle amaretti crumbs over for an added crunch.  Enjoy!
